Kanelbulle (English)

If I should use a word to describe the smell of  Stockholm and the whole Sweden I have no doubt I would pick Cinnamon.

Stockholm and Sweden smells like cinnamon, which its at the same time one of my favorite smells. The country smells like cinnamon, smells that comes from cafes, small stores, the supermarket…and thats just because the typical local pastry has cinnamon as its principal ingredient, those delicious cinnamon buns are called kanelbulle, and they are so important in the country that they even have its day marked in the calendar, and thats the 4th of october.

I am lucky enough to have an amazing swedish husband who bakes delicious kanellbulle. Im gonna share his recipt:

Ingredients for aprox. 40 kanellbulle.

-150 gr of butter

-5 dl of milk

-50 gr of Yeast

– 1 dl of sugar

– half food spoon of salt

– 850 gr of flour

For the filling:

– 150 gr of butter

– 1 dl of sugar

– 2 food spoons of cinnamon

For the topping:

-1 Egg

– Pearl sugar


Prepare your bread dough  using the first 6 ingredients listed above

After punching down dough following its first rise, remove from bowl and knead lightly on floured counter until smooth and shiny. Divide dough into two halves.

Roll each half of dough into a 12” by 18” rectangle. Brush each rectangle well with melted butter. Combine 2/3 cup sugar and 2 Tbsp. cinnamon; sprinkle evenly over the 2 rectangles. Roll each rectangle crosswise, like a jelly roll, to form an 18”-long cylinder.

Using a sharp or serrated knife, cut each cylinder into 20 equal slices.

Place each slice into a paper cupcake wrapper and place on baking sheet. Cover with towel and allow to double in size, about 45 minutes. Preheat oven to 425º.

Brush risen cinnamon rolls with egg wash and sprinkle with pearl sugar and / or almonds. Place in the middle of a preheated oven and bake for 7 minutes, or until done.
